Quick and Easy Single Serve Creamy Caesar Pizza
It is no secret pizza is my jam! It has everything I love! Carbs, cheese, salty cured meats! And it's like beers best friend. And beer is glorious! And I just can't keep best friends apart like that, now can I! So on very rare occasions I indulge on the two biggest contributors my weight gain, but I do it very differently then I use to. If we do takeout I get a thin crust and try and stick with lean meats and veggies. Beer, well it's still beer. So I have one small beer instead of 4 giant ones. Did I mention I love beer.
If I make it at home it's even better, because I can control the ingredients. This super easy recipe satisfies my carb craving and with a Caesar dressing base it tasted way more indulgent then it actually is! I make it with whatever I have on hand that sounds good. Here is how I made it today.
1/2 whole wheat pita, sliced through the middle to make it thinner. (I just use a sharp knife and slide it around the outside edges until I have to flat pita pieces.)
1 tbs reduced calorie Caesar dressing (I like the brand pictured, and it's what I used to calculate the calories in this recipe.)
1 serving shredded non fat mozzarella cheese
1 tbs reduced fat Colby jack or cheese of choice
1 slice deli ham, sliced (Or I just tare it up with my hands. I'm quite savage.)
6 slices turkey pepperoni
handful of sliced mushrooms
red pepper flakes (optional)
sprinkle of parm cheese (optional)
Place your thin sliced pita bread on a cookie sheet sprayed with cooking spray. Spread 1 tbs Caesar dressing evenly over the top. Top with cheese, meats and then mushrooms. Bake at 375' F for 7 to 8 minutes, until cheese is melted and the crust edges have browned just a bit. Remove, slice and sprinkle with pepper flakes and parm if desired. Serve it with your favorite IPA in a frosty mug!
One whole single serve pizza is approximately 225 calories. (so even if you really go for it and have 2, it's still under 500 calories!! The beer is on you though. 😜😜😜😜
