Pumpkin Cheese Cake Oatmeal Cookies

- 1 cup, Pumpkin, canned
- 1/2 cup golden Sweetener with Monk Fruit
- 1/2 cup calorie free sugar substitute
- 2 large Egg
- 1 package Cheese Cake Sugar Free Powder
- 1 tsp Vanilla extract
- 1 cup cooked, Old Fashioned Rolled Oats
- 1.25 cup, White Enriched flour
- 1 tsp baking soda
- 0.50 cup Dark Chocolate Chips
- Preheat oven to 375F. In a mixing bowl combined pumpkin, no calorie sweetener of choice, (I think Monk Fruit has the least aftertaste) eggs, pudding mix and vanilla. Mix until combined. Slowly add flour, then oats, then baking soda while mixing. Turn off mixer and hand stir in your chocolate chips (white chocolate chips would be yummy too, but might add a bit to calories, but it would be minimal. Spray a cookie ship with cooking spray and drop big tablespoon fulls of dough onto your sheet. Bake for 8 to 10 minutes. They don't really brown, so take care not to over bake. Let cool on a rack.
- This recipe makes about 20 cookies, at about 85 calories each.
